The Wine

Mytho is the result of a carefully conceived and long-cherished project, and is perhaps a declaration of love from “Ambrogio & Giovanni Folonari” to Sangiovese. Produced exclusively from Sangiovese grapes, yielding just a few dozen quintals per hectare, the grapes are allowed to overripen through the ‘removal’ of the shoot that blocks or slows lymphatic circulation, placing the bunch in a metabolic state of ‘assisted dormancy’ induced by the plant. This process develops, within the grape, deep, ethereal sensory notes that define the unique character of Cabreo Mytho.

Grape variety: Sangiovese
Planting pattern: 3.000 – 5.000 plants per hectare

In the winery

Vinification: fermentation in stainless steel and maceration for approximately 4 weeks
Aging: aged for around 30 months in French oak barrels, before being finished in the bottle
Alcohol content: 14.5%

Le Tenute del Cabreo

Purchased by Nino Folonari, Giovanni’s grandfather, in 1967, the Zano estate covers about 60 hectares, 45 of which are planted with Sangiovese, Cabernet Sauvignon and Merlot and the other ones are woods or rural settlements.
